Holiday Recipe: Roasted Carrots With Thyme

Ingredients:
6 ounces small carrots, trimmed and scrubbed
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
3 (6-inch) thyme sprigs
1 medium garlic clove, smashed
1/2 teaspoon kosher salt
Directions:
Preheat oven to 400 degrees. Heat oil in a large skillet over medium-high until wisps of smoke form (2 to 3 minutes).
Add carrots and olive oil to pan in a single layer and cook, tossing occasionally until golden brown spots appear (3 to 5 minutes).
Add butter, thyme, and garlic; toss constantly until butter melts (30 seconds).
Sprinkle carrots with salt and toss evenly.
Transfer skillet to preheated oven and roast until carrots are fork tender (8 to 10 minutes).
Serve and enjoy!
